Then I spread them out on clean dishtowels and leave them for an hour or so at room temp before storing... I repeat in batches while doing other things when the box arrives so it doesn't take much, then they are stored and mostly ready to use. I don't rewash greens before use, though I do rewash radishes, beets and carrots to give them more of a scrub with the brush right before use.

If you want a "green" smoothie but don't want the green color/taste, may I suggest using frozen blueberries, some other frozen fruit (I always wash, chunk and freeze fruit in advance to have for smoothies, it replaces the ice easily that way) and then add a handful or 2 of greens. Blueberries will hide the color of the greens and often cover the taste as well. If you want more nutrition add either greek yogurt or fortified non dairy milk.

I use a LOT of greens in salads and on sandwiches, as well as in spring rolls and the like, but I also make a dish with tomatoes, onions, (peppers and mushrooms optional), spices, greens and eggs that I serve over toast for breakfast. I make a sauce with everything but the eggs and greens, then poach the eggs in it and wilt the greens over top while the eggs are poaching. YUM! I will post the recipe and some pictures from the last time on my eating4living.com blog later today or tomorrow.

Amie
